Huckleberry-Spruce Mustard

Ingredients

  • ½ cup Oregon pinot noir
    2 tablespoon minced shallots
    ¼ cup granulated sugar
    ¼ cup yellow mustard seeds
    1 tablespoon red wine vinegar
    ¼ tablespoon spruce extract
    1 cup fresh or frozen huckleberries, cleaned and stemmed 

Directions

Combine all ingredients with the exception of the huckleberries and simmer over low heat until seeds are plumped and liquid has reduced by 2/3. Add huckleberries and heat briefly until they begin to burst. Cool down quickly, cover and refrigerate.? Use with grilled or smoked meats, especially wild game such as venison.
